This is a delicious recipe that my family all loves! I have a few picky eaters, so when I find a meal that the whole family eats well, I am ecstatic! I also love how simple this meal is to make. It seems like it will take forever, but it is fast and easy. The potatoes have a ton of flavor and the pork chops are tender and juicy. You can make this for a quick weeknight meal or you can make this for a nice family dinner. It is versatile. I like to cook the potatoes longer than the pork chops, otherwise the potatoes are a little crunchy. You can put them in the oven while you are preparing the pork chops, so it really doesn’t take much longer to do it that way. I hope that your family loves this recipe as much as mine!

Ingredients:

6 Large Potatoes

1 can Cream of Mushroom Soup

½ c. Sour Cream

½ c. Milk

1 package Lipton Onion Soup Mix

2 Tbl. Parsley

6-8 Pork Chops

3-4 Tbl. Olive Oil

1 c. Flour

Bake at 375°F for 1 hour 30 minutes

Preparation:

1. Preheat the oven to 375°F.


2. Wash and slice the potatoes into thin slices. Place the potatoes in the bottom of a 9x13 glass baking dish, but spread them out a little bit so that they can get the sauce all over them. See the picture for an example.


3. In a medium-sized mixing bowl combine the Cream of Mushroom Soup, Sour Cream, Milk, Lipton Onion Soup Mix, and the Parsley. Stir to mix.


4. Pour the sauce over the potatoes. Cover and bake for 30 minutes while you prepare the pork chops.


5. Heat the Olive Oil in a frying pan on medium heat.  Dredge each Pork Chop in Flour and make sure that it is coated on both sides. Then fry each Pork Chop for 3-4 minutes on each side, or until it is lightly browned. Sprinkle with Salt. Remove from the pan and set aside. Repeat with the rest of the pork chops.


6. Place the Pork Chops on top of the Potatoes. Cover and return them to the oven and continue to bake for 1 hour and 10 minutes.


7. Remove from the oven. Serve and enjoy!
