These muffins make a delicious breakfast!! I love Coffee Cake. It has been one of my favorite foods for years. I don’t eat it very often, but I love it every time I eat it. I decided to try it in muffin form and it was a huge hit! We all loved it. It is simple to make and it makes a perfect breakfast or brunch item. The muffin is moist and buttery delicious. It is topped with Cinnamon Sugar and Pecans. This also makes a good snack. These freeze well so you can pull them out of the freezer for a quick breakfast idea. I hope you love this recipe as much as we do!

Ingredients:

Muffins

½ c. Salted Butter

1 c. Sugar

2 Eggs

1 c. Sour Cream

1 tsp. Vanilla

1 ½ tsp. Baking Soda

¼ tsp. Salt

2 c. Flour


Topping

½ c. Sugar

½ c. Brown Sugar

1 Tbl. Cinnamon

½ tsp. Nutmeg

1 c. Chopped Pecans

Bake at 350°F for 20-22 minutes

Preparation:

1. Preheat the oven to 350°F.


2. Cream the Butter and the Sugar.


3. Add the Eggs, Sour Cream, and the Vanilla. Mix it well.


4. Add the Baking Soda, Salt, and the Flour. Mix well.


5. Place muffin cups in the muffin pan. Spray them lightly with Pam Spray. Then fill the muffin cup ¾ full. Click here for the muffin pans that I use and love!


6. In a small bowl make the topping. Combine the Sugar, Brown Sugar, Cinnamon, Nutmeg, and the Chopped Pecans. Stir it together.


7. Sprinkle the Cinnamon mixture on top of the muffin.


8. Bake for 20-22 minutes.


9. Serve and enjoy!
