This is an amazing dinner that is one of my favorites to make. It comes together so quick and easy, and it is healthy and delicious! I love the mango salsa and could eat that by itself. The chicken is tender and a little spicy so that the meal has a little kick to it. This dinner takes about 30-40 minutes to put together and it is filling and so delicious. I also like to make this sometimes for lunch since it is both filling and healthy. The mango salsa stays fresh and doesn’t turn brown, and the flavor gets better over time. I like to top this meal with Cilantro-Lime Crema from Costco. It is good without, but I use that anytime that I can because it is so good! I hope you love this recipe as much as we do!

Ingredients:

3 lb. Chicken Breast

1 Tbl. Olive Oil

3 tsp. Chipotle Powder

1 tsp. Salt

2 tsp. Garlic Powder

6 c. Cooked Rice


Mango Salsa

2 Large Mangos

2 Large Avocados

½ Red Onion

½ c. Cilantro

¼ c. Lime Juice

Preparation:

1. Cook the rice and set aside.


2. While the rice is cooking, cut the Chicken into bite-sized pieces. Heat a pan on a medium heat and add the Olive Oil. Then cook the Chicken until it is cooked through. Add the Chipotle Powder, Salt, and the Garlic Powder. Stir together and let it simmer on a low heat for 3-4 minutes.


3. Make the Mango Salsa. Cut the Mangoes up into bite-sized pieces. Then cut the Avocado into bite-sized pieces and add it to the Mango.


4. Chop the Red Onion and the Cilantro and add it to the Mango. Add the Lime Juice and stir it up to mix.


5. Layer the Rice, Chicken, and the Mango Salsa. You can top it with Cilantro-Lime Crema from Costco if you like. Serve and enjoy!
