
If you are looking for a quick and easy slow cooker meal, this one is amazing! I love a good, healthy meal that hardly takes any time to make. I cook the pork in the slow cooker all day, and then it takes about 20-30 minutes to put the rest of the meal together. The kids love rice bowls of any kind because they can make it just how they want it. I like that I can have a healthy and balanced meal without doing tacos when I want Mexican food. The pork takes just 3 ingredients and it is seriously so good! I could eat the pork by itself. You could use this pork for tacos, burritos, tostadas, or really just about any kind of food. You could also make a big batch and freeze some of it for other meals. I hope you love this recipe as much as we do!
Preparation:
1. Place the Pork Loin in the Slow Cooker and turn it on low. Add the Salsa Verde and the brown Sugar. Cover it and cook it for 6-8 hours. You can also cook it on high for 4-5 hours.
2. Remove the Pork from the slow cooker and either shred it or cut it into small pieces. Place the Pork back into the Sauce to mix all the flavors.
3. Cook the Rice and prepare all the other toppings.
4. Serve and enjoy!
