
I love a good chicken salad sandwich! There are so many different variations of this sandwich, and many of them are good. But what I don’t love is recipes that are just thick mayo with shredded chicken. I wanted something that was light, but still had all the delicious flavors of chicken salad. This recipe is very simple to make and makes a big batch so that there is enough for leftovers. I loved to make this during the summer because it isn’t hot and it is quick and easy to make. You can make them for picnics, dinner, or even a potluck. My kids love this meal. I usually serve this with some fruit and a tossed salad. I hope you love this recipe as much as we do!
Preparation:
1. Cook the Chicken Breasts. You can cook them in the Air Fryer, or on the stove in a frying pan on a medium heat with a little Olive Oil in the bottom. Sprinkle Salt on them before cooking. When the chicken is cooked through, let it cool completely.
2. Dice the Chicken, Onion, and the Celery and place it in a medium-sized mixing bowl. Add the Cashews and the Mayonnaise and stir it until it is all mixed together.
3. Serve on large Crescent Rolls. Enjoy!
