
This is a recipe that my whole family loved! If you are looking for a simple pasta recipe that has a ton of flavor while still being light, this is it! This is a fairly healthy pasta recipe with veggies and a little olive oil and some bacon to give it flavor. This recipe is quick and easy to make, which makes it perfect for a busy night. It makes a big batch so it is great for leftovers, and I think it might even be better the second day. My kids devoured this meal. I like to serve it with a side salad and some fresh fruit. I hope you love this recipe as much as we do!
Preparation:
1. Cook the Pasta according to package directions. Drain and set aside.
2. While the pasta is cooking Dice the Onion and mince the Garlic. Heat a large frying pan on a medium heat. Add the Olive Oil and cook the Onions and the Garlic until they are soft and translucent.
3. Dice the Roma Tomatoes and the Olives. Add the Bacon, Tomatoes, Olives, Parmesan Cheese, Parsley, and the Pepper and stir it together. Remove from the heat.
4. Stir the Spaghetti Noodles into the Veggies.
5. Garnish with Parmesan Cheese. Serve and enjoy!
