
I love all things blueberry, and this pancake recipe is no exception! When it is blueberry season in North Carolina, I make as many recipes as I can using the blueberries from my plants because it is always better when they are freshly picked. You can also make this recipe using frozen blueberries. These pancakes are soft and fluffy. They are quick and easy to make for a delicious breakfast. I like to make these with Buttermilk Syrup. The combination is amazing! I hope you love this recipe as much as we do!
Preparation:
1. In a medium-sized mixing bowl, combine the Flour, Salt, Baking Powder, Baking Soda, Sugar, Eggs, Oil, and the Buttermilk. Mix well till it is smooth.
2. Add the Blueberries and stir them in.
3. Heat a pan on a medium heat, or an electric skillet to 350°F.
4. Butter the pan and pour about ½ c. batter onto the hot pan. Let it cook for 3-4 minutes, or until it is bubbly on top. Then flip it over and let it cook for another 2-3 minutes, or until it is cooked through. Remove from the pan. Repeat with the remaining batter.
5. Serve and enjoy!
