Banana Cream Pie
This has always been one of my favorite pie recipes. I used to be a picky eater and this was the only pie I would ever eat at Thanksgiving. I still love this pie and it is still a favorite although I have branched out and am no longer a picky eater. I like many different pies now. But I always still make sure that this pie is on our menu. I also like to make it a few other times during the year. It has a creamy custard filling that is delicious! You can also substitute this pie filling for Banana Pudding, which is a delicacy in the south. It is simple to make and will make the house smell delicious! I hope you love this recipe as much as we do!
Preparation:
1. Make your Pie Crust. Click here for my Pie Crust recipe, or you can cook a pre-made one. The crust needs to be pre-cooked.
2. Separate 3 Eggs. Discard the egg whites and set the Yolks aside.
3. In a medium-sized sauce pan combine the Sugar, Cornstarch, and the Salt. Add the Milk and the Cream and stir until it is creamy and smooth. Cook it on a medium heat until it is thick and creamy. It should be quite thick.
4. Stir the Egg Yolks into the mixture quickly with a wire whisk until they are completely blended in. Then continue to cook for 3 more minutes. Stir it constantly so that it doesn’t scorch.
5. Remove the custard from the heat and stir in the Butter and the Vanilla.
6. Slice 2-4 Bananas into the bottom of the pie shell. Pour the Custard over the top and let it cool completely.
7. Make Whipping Cream by beating the Heavy Whipping Cream until it is thick. Add the Powdered Sugar. Top the pie with the Whipped Cream.
8. Serve and enjoy!
