Fresh Peach Pie
This recipe is literally my favorite dessert of all time! Fresh peaches are a heavenly fruit. I always looked forward to the time that we would get peaches off our trees. I had this pie for my birthday dessert every year rather than a cake. My favorite way to eat it is with homemade vanilla ice cream. I don’t always have time to make that now, but I still eat it with vanilla ice cream. This was my grandma’s recipe and it will always and forever be my favorite.
Preparation:
1. Preheat the oven to 375°F.
2. Make your crust. In a small mixing bowl combine the Graham Cracker Crumbs, Sugar, and Melted Butter. Mix it with a spoon till it is combined. Then press this in a deep-dish pie pan. Press it until it is even all the way around and up the sides.
3. Bake the crust for 7 minutes, or until lightly golden brown. Remove it from the oven and let it cool completely.
4. In a saucepan boil 2 c. of Hot Water.
5. In a small mixing bowl combine the Cold Water, Sugar, Cornstarch, and the Salt. Stir it until it is mixed well.
6. Slowly stir the cornstarch and sugar mixture into the boiling water. Continue stirring it and cooking it until it is very thick. Let it boil for about 2-3 minutes.
7. Stir in the Jello and let it cook for 1 more minute. Remove it from the heat and let it cool completely. You can put it in the fridge if you want it to cool faster.
8. Peel and slice your peaches into bite-size pieces. Add half the Jello mixture for 1 pie. Stir it gently until it is coating all the peaches. Pour it into your pie crust and refrigerate for 1 hour.
9. Serve and enjoy!
