Apple Cranberry Coleslaw
This is a delicious summer or fall salad. I love any kind of coleslaw and this is a fun variation that has tons of flavor and is simple to make. This is also a fairly healthy version of coleslaw. It uses yogurt rather than tons of mayonnaise. I love to substitute yogurt for mayo because it is healthier and it tastes just as good. You will love this salad!
Ingredients:
Salad
1 small head of Cabbage, shredded (or 2 packages of coleslaw mix)
½ c. Green Onions, chopped
2 large Gala Apples, sliced into matchsticks
¾ c. Sliced Almonds
¾ c. Craisins
Dressing
¾ c. Fat-free Greek Yogurt
¼ c. Mayonnaise
¼ c. Honey
2 Tbl. Apple Cider Vinegar
1/8 tsp. Salt
1/8 tsp. Freshly Ground Pepper
Preparation:
1. Slice a small cabbage thin (about 6-7 cups), or you can use a package of coleslaw mix. Place the cabbage in a large mixing bowl.
2. Slice the Green Onions and the Apples into small pieces and add them to the Cabbage.
3. Add the Almonds and the Craisins and mix together.
4. In a small bowl make the dressing by combining the Yogurt, Mayonnaise, Honey, Apple Cider Vinegar, and he Salt and Pepper.
5. Mix the Dressing with the vegetables until it is combined.
6. Serve and enjoy!
