Potato Salad is one of those foods that most people love, but there are a million ways to make it. Most people have their preferred recipe, and so do I, but this one is quite different than most recipes. It is delicious! Every time I make it to take it to a BBQ, I always get people asking me for the recipe. So, if you are on the lookout for a new potato salad, then try this one. It won’t disappoint. There is quite a bit of crunch in this salad, which I love. Some recipes taste like flavored mashed potatoes. This one has a lot of texture to it.

Ingredients:

2 ½ c. Cubed, cooked Potatoes

2 Hard Boiled Eggs

½ c. Chopped Onion

½ c. Chopped Celery

¼ c. Diced Sweet Pickle

¾ c. Mayonnaise

1 tsp. Sugar

1 tsp. White Vinegar

1 ½ tsp. Salt

1 ½ tsp. Celery Seed

Preparation:

1. Wash and boil the potatoes. I cut them in large pieces and boil them with the skins on. They hold their shape much better and don’t turn mushy. Boil the potatoes until they are soft enough to poke through with a fork, but not mushy.


2. While the potatoes are cooking, boil the eggs. You can boil them for 9 minutes in a saucepan, but make sure they are covered with water. If you want to cook them in the Instant Pot, then it is a little faster. (This is my preferred method. They peel easier and it is so quick. See how to boil eggs in the Instant Pot here.)


3. Drain the potatoes and cool them. You can cool them faster by rinsing them with cold water.


4. Peel the potatoes and dice them into bite-sized pieces. Place them in a large mixing bowl.


5. Chop the Onion, Celery, and the Sweet Pickles. Place them in the mixing bowl.


6. In a separate small bowl, mix the Mayonnaise, Sugar, Vinegar, Salt, and Celery Seed. Pour the sauce over the potatoes and vegetables and stir it until it is mixed.


7. Serve and enjoy!
