BBQ Chicken Ranch Salad
This is a delicious salad that I love to make for my family. I love to make meals with lots of veggies and try to get in as many as possible. My kids don’t always love it when I make a salad for dinner, but they always eat this one! It is simple to make and has tons of good flavor. I love the ranch and the BBQ sauce flavors mixed together. This salad could be a restaurant menu item. It is that good! I also like to make a loaf of French Bread to go with this meal. I would like the salad by itself, but my family always wants some bread to go with their salad. I hope you love this recipe as much as we do!
Ingredients:
2 lb. Boneless, Skinless Chicken Breast
1 Tbl. Olive Oil (if you are cooking it in a pan on the stove)
6-8 c. Chopped Romaine Lettuce
¾ c. Corn, drained
¼ c. Red Onion, diced
¾ c. Shredded Cheddar Cheese
2 Roma Tomatoes
1 15 oz. can Black Beans, drained
½ c. BBQ Sauce
½ c. Ranch Dressing
1 c. Tortilla Strips
Preparation:
1. Cook 2 lb. Chicken Breast. I prefer to cook them in the Air Fryer, but you can cook them any way you like. You can cook them on the stove in some Olive Oil and cook them for 4-5 minutes on each side.
2. Chop the Chicken into bite-sized pieces. Chop the Red Onion and the Roma Tomato.
3. Assemble the salad. Chop the Romaine Lettuce and place it in a large bowl. Add the Chicken, Corn, Onion, Shredded Cheese, Tomato, Black Beans, Ranch Dressing, BBQ Sauce, and the Tortilla Strips.
4. Mix the salad and serve immediately.
5. Enjoy!
