Meatloaf is one of those foods that you either love or hate. My family has always hated it. I have always loved it, but didn’t make it very often because I was the only one that enjoyed it. I finally decided to make my own recipe and ditch the recipe I used to make. Now everyone LOVES meatloaf! I don’t have to beg my kids to eat it anymore. They eat it and ask for seconds. I love this meal because it is simple and filling. I like to pair it with potatoes and a vegetable like green beans. If your family struggles with meatloaf, then try this recipe and it will change their minds.

Ingredients:

½ Onion, chopped

1 Tbl. Olive Oil

2 lb. Ground Beef

2 Eggs

2 tsp. Salt

¼ tsp. Pepper

2 Tbl. Worcestershire Sauce

2 Tbl. Brown Sugar

½ c. Milk

1 ½ c. Dry Bread Crumbs

1 tsp. Italian Seasoning

½-3/4 c. BBQ Sauce

Bake 350°F for 1 hour

Preparation:

1. Preheat oven to 350°F.


2. Chop ½ onion and sauté it in a frying pan with 1 Tbl. Olive Oil. Sauté it until it is fragrant and starting to become transparent, but not burned.


3. In a large mixing bowl, add the sauteed onion, Ground Beef, Eggs, Salt, Pepper, Worcestershire Sauce, Brown Sugar, Milk, Bread Crumbs, and Italian Seasoning. That means everything but the BBQ Sauce. Mix it up with a mixer, or use your hands to mix it all together.


4. On a roasting pan, form a loaf with the meat mixture.


5. Pour BBQ sauce over the top of the meatloaf and spread it with a spoon or a rubber spatula until the loaf is covered.


6. Bake for 1 hour, or until it is no longer pink in the middle.


7. Serve and enjoy!

Alterations

  • You can use any flavor of BBQ Sauce that you enjoy.
