Strawberry Pudding
This is a recipe that came from my grandma. It is one of my favorite spring-time desserts! This is something I always look forward to eating during strawberry season. I used to ride my bike over to my grandma’s house and pick her strawberries. Then I would come home and make strawberry jam and strawberry pudding. I could eat this forever because it is so good! My grandma liked to serve this with cream, but I prefer to eat it with vanilla ice cream. Both ways are good. This is an old-fashioned recipe that will become a favorite!
Preparation:
1. Wash, de-stem, and crush the strawberries. I like to use a potato masher to crush my berries. I like to leave some chunks in mine, but you can purée them if you prefer it that way.
2. In a large bowl, combine the crushed Strawberries and ½ c. Sugar. Stir till the sugar is mostly dissolved.
3. In a saucepan, combine the Tapioca Pudding, ½ c. Sugar, Salt, and Water. Cook on a medium heat until the Tapioca Pudding is clear and thick. Stir it constantly.
4. When it is thick, add the Butter and the Lemon Juice. Stir to combine.
5. Pour the Pudding into the Strawberries and stir together. Let refrigerate for 3-4 hours before serving.
6. Serve and enjoy!
