Soft Lemon Cookies
These cookies are just delightful! They are so soft and the flavor is perfect! I love anything with lemon in it. The more lemon flavor, the better! I have been in search of the perfect lemon cookie for a while. I have tried a few recipes and thought they were ok, but this is the recipe that I am sticking with. It is a slight variation from my grandma’s cookie recipe, but with lemon instead of chocolate. These cookies have pudding in them which make them soft and so delicious! They are simple to make and won’t last for long! I hope you enjoy them as much as we do!
Preparation:
1. Preheat the oven to 375°F.
2. In a medium-sized mixing bowl cream the Butter and the Sugar.
3. Add the Eggs and mix it well.
4. Add the Lemon Pudding, Baking Soda, Vanilla, and the Lemon Juice. Mix it well.
5. Add the Flour and mix it well.
6. Grease a baking sheet. Roll the dough into 1 ½-2 inch balls. Roll each ball of dough in Powdered Sugar and place it on the baking sheet.
7. Bake for 10 minutes. Remove from the oven. Let it cool for a few minutes and then move the cookies to a cooling rack.
8. Serve and enjoy!
