This is one of our families favorite Christmas recipes. There is nothing better than soft caramels that have the perfect texture and flavor. These are simple to make and they stay soft. They won't harden over time. You can use this recipe for many different things like turtles or just to dip in chocolate. I prefer to eat it plain because it is so good! But you can make it however you like it. You really can't go wrong. I hope you enjoy this recipe!

Ingredients:

1 1/2 c. Karo Syrup

2 c. Sugar

2 c. Heavy Whipping Cream

1/2 c. Salted Butter

1 1/2 tsp. Vanilla

Preparation:

1. Calibrate your candy thermometer. My boiling temperature where I live is 205°F. If yours is 210°F, then you would add 5°F to the temperatures that I have written in my recipe.


2. Butter a 9x13 glass baking dish and set aside.


3. In a large, heavy-bottom cooking pot combine the Karo Syrup, Sugar, and half of the Heavy Whipping Cream. Bring it to a boil.


4. When it is boiling vigorously, slowly add the rest of the Cream so that it doesn't stop boiling while you are adding it.


5. When you are done adding the cream, add the Butter.


6. Continue stirring it until it reaches 233-234°F.


7. Remove the Caramel from the heat and add the Vanilla. Stir it in completely.


8. Pour the Caramel into the buttered baking dish and allow it to cool completely.


9. Cut the Caramel with a sharp knife and wrap it in squares of wax paper. See the picture for an example.


10. Serve and enjoy!
