This slow cooker pot roast is an ultimate comfort food! I love tender, juicy beef roast with the perfect gravy. There isn’t much that is tastier! This recipe is simple to make and hardly takes any time at all. It is perfect for a busy day at work, or a busy night with kids. You will come home to a delicious dinner that is so filling! Not to mention, your house will smell amazing! My kids love this meal and always ask for more. I like to serve this over mashed potatoes with a side of vegetables or a salad and fruit. I hope you love this recipe as much as we do!
Preparation:
1. Heat a frying pan on the stove on a medium heat. Add the Olive Oil. Cook the Beef Roast on all sides for 3-4 minutes. Then place the roast in a slow cooker and turn on low. Click here for the Slow Cooker that I use and love!
2. Add the Beef Broth and the Dry Onion Soup Mix. Cook on a low heat for 6-8 hours, or on high for 4-5 hours.
3. Shred the Beef and place it back into the liquid.
4. Mix the Cornstarch and the Cold Water and pour it into the slow cooker. Stir it around till the liquid thickens into gravy.
5. Serve over mashed potatoes. Enjoy!
