
This is one of my favorite slow cooker meals. I had bought some Lime Cilantro Hoisin Sauce thinking that I would experiment with it in a recipe, but wasn’t quite sure how I was going to use it. I thought about it for a while and finally decided to use it in a slow cooker meal with chicken. I was a little nervous, but this was a smashing success! All of my kids loved this one! Even my youngest, who is my pickiest eater told me that this is one of her favorite meals! It always makes me happy when they love my creations. This meal takes minutes to put together. The sauce is simple. I like to serve this with rice and a side of steamed broccoli. It makes a healthy and delicious dinner that the whole family will enjoy! I hope you love this meal as much as we do!
Preparation:
1. Heat the Olive Oil in a frying pan. Place the Chicken Thighs in the oil and cook for 3-4 minutes on each side. Sprinkle with Salt and Pepper. Then place the chicken thighs in the crockpot.
2. In a medium-size mixing bowl combine the Ketchup, Lime Cilantro Hoisin Sauce, Sesame Oil, Brown Sugar, Honey, and the Ginger. Stir together and then pour over the chicken.
3. Cook the chicken on low for 6-8 hours, or on high for 4-5 hours.
4. 15 minutes before serving, mix the Cornstarch and the Cold Water in a small mixing bowl. Pour the mixture into the crockpot and stir it around a little. It will thicken on its own.
5. Serve with rice. Enjoy!
