I was introduced to this dessert when I was a kid in Elementary School. They were often served with school lunch during the Fall months. I always loved them, but never had a recipe to make them at home. I finally have a delicious and moist recipe that you will love! My family now gets to enjoy this delicious cake.

Ingredients:

Pumpkin Cake

2 c. Sugar

2 c. Flour

1 tsp. Salt

1 tsp. Vanilla

1 tsp. Baking Soda

1 tsp. Baking Powder

2 tsp. Cinnamon

4 Eggs

2 c. Canned Pumpkin

¾ c. Oil

Bake at 350°F for 20-25 minutes

Cream Cheese Frosting

1/2 c. Salted Butter

8 oz. Cream Cheese

2 tsp. Vanilla

¼ c. Milk

4 c. Powdered Sugar

Preparation:

1. Preheat the oven to 350°F.

2. In a large mixing bowl, combine the Sugar, Flour, Salt, Vanilla, Baking Powder, Baking Soda, Cinnamon, Eggs, Pumpkin, and the Oil. Mix them until they are mixed well.

3. Grease a 11x15 sheet pan and spread the cake batter evenly.

4. Bake the cake for 20-25 minutes, or until an inserted toothpick comes out clean.

5. Cool the cake completely.
