This is a delicious recipe that my family loves. I grew up eating this recipe, but I changed it to make it a little better and now we love it! I added Bacon Bits to the recipe because who doesn’t love cheese and bacon? These are creamy, cheesy potatoes with bacon and green onions mixed in. They have a crunchy topping of Corn Flakes that makes them perfect! These are simple to make and make a good side dish if you are eating ham or grilling out. I hope you love this recipe as much as we do!

Ingredients:

2 lb. Shredded Potatoes, thawed

2 cans Cream of Chicken Soup

2 c. Sour Cream

½ c. Melted Butter

2 c. Shredded Cheddar Cheese

1 c. Shredded Mozzarella Cheese

1 tsp. Salt

6 Green Onions sliced

1 c. Bacon Bits

4 c. Corn Flakes

¼ c. Melted Butter

Bake at 350°F for 1 hour

Preparation:

1. Preheat the oven to 350°F.


2. Place the Shredded Potatoes in a large mixing bowl. Add the Cream of Chicken Soup, Sour Cream, Melted Butter, Cheddar Cheese, Mozzarella Cheese, Salt, Green Onions, and Bacon Bits. Stir it all together until it is mixed well.


3. Spread the potatoes out in a 9x13 glass baking dish.


4. Bake for 45 minutes.


5. Crush the Corn Flakes in a Ziplock Bag. Then add the Melted Butter and spread them over the top of the potatoes. Bake an additional 15 minutes.


6. Serve and enjoy!

Alterations

  • You can omit the Green Onions if you don't like them.

  • You can sprinkle Cheese on the top as a substitution for Corn Flakes.
