This pie has been a family favorite for years. I received a version of this recipe from an adopted grandma who I loved dearly. She told me I hadn’t lived until I tried her pie. She was right! I am a huge peanut butter lover and so is my family. This pie is quick and easy to make, but so delicious and creamy. It has the perfect amount of Peanut Butter. You can freeze it or keep it in the fridge. It is one of our favorite pies to make for Thanksgiving. I like to add some Chocolate Ganache to the top and drizzle some melted peanut butter over the top to add more flavor. You can keep it simple with just the pie, or you can add the extra layers. It is delicious both ways. I hope you love this recipe as much as we do!

Ingredients:

Graham Cracker Crust

1 ½ c. Graham Cracker Crumbs

¼ c. Sugar

¼ c. Salted Butter

Bake at 375°F for 7-8 minutes


Peanut Butter Pie Filling

1 ¼ c. Creamy Peanut Butter

1 package Cream Cheese

12 oz. Cool Whip, thawed

1 ½ c. Powdered Sugar

1 ½ tsp. Vanilla


Chocolate Ganache

1 c. Heavy Whipping Cream

1 ¼ c. Chocolate Chips

Preparation:

1. Preheat the oven to 375°F.


2. In a small mixing bowl combine the Graham Cracker Crumbs, Sugar, and Melted Butter. Mix them together and press them into a pie dish.


3. Bake for 7-8 minutes. Remove from the oven and cool completely.


4. In a medium mixing bowl combine the Peanut Butter, Cream Cheese, Cool Whip, Powdered Sugar, and the Vanilla. Mix it together well.


5. Spoon the peanut butter mixture into the graham cracker crust and spread it until it is smooth. Place it in the fridge and let it chill for 2-3 hours.


6. Make the Ganache by placing the Cream in a microwave safe dish. Heat it until it is almost boiling, but not quite. Stir in the Chocolate Chips until it is smooth and creamy. Let it cool for 20-30 minutes on the counter. Then spread it over the peanut butter pie.


7. If you would like to, you can melt ½ c. Peanut Butter in the microwave for about 30-60 seconds. Just until it is nice and runny. Then drizzle it over the pie.


8. Serve and enjoy!
