Peanut Butter Cup Chocolate Cake
I love a good chocolate cake, but chocolate cake mixed with peanut butter is even better! This cake recipe is a huge favorite in my family. The cake is perfectly moist and light and fluffy. It is so much better than a box cake mix and almost just as easy to make. The middle layer is a thick peanut butter icing that is rich and delicious. The cake is frosted with a chocolate mousse that makes this cake so perfect! I like to melt peanut butter and drizzle it over the top and top it with Reese’s. This cake will make everyone’s mouth water. It is rich and is perfect for a birthday, special occasion, or just whenever you feel like baking a cake. I hope you love this as much as we do!
Ingredients:
Chocolate Cake
2 c. Sugar
1 ¾ c. Flour
¾ c. Cocoa
1 ½ tsp. Baking Powder
1 ½ tsp. Baking Soda
1 tsp. Salt
2 Eggs
2 c. Milk
½ c. Oil
2 tsp. Vanilla
Bake at 350°F for 30-35 minutes
Peanut Butter Filling
½ c. Salted Butter
1 c. Creamy Peanut Butter
6 Tbl. Milk
2 tsp. Vanilla
3 c. Powdered Sugar
Chocolate Mousse Icing
2 ½ c. Heavy Whipping Cream
2 ½ c. Semi-sweet Chocolate Chips
Melted Peanut Butter for the top, and Reese’s candy
Preparation:
1. Preheat the oven to 350°F.
2. In a medium-sized mixing bowl add the Flour, Sugar, Cocoa, Baking Powder, Baking Soda, Salt, Eggs, Milk, Oil, and the Vanilla. Mix it up well.
3. Pour the batter into 2 greased and floured round cake pans. I also like to line my cake pans with Parchment Paper so that they come out easily. Grease the parchment paper and sprinkle it with a thin layer of flour. See the picture for an example.
4. Bake the cake 30-35 minutes, or until an inserted toothpick comes out clean. Remove from the oven.
5. Remove the cakes from the pans and place them on a cooling rack. Allow them to cool completely before frosting them.
6. While the cake is baking, place the Heavy Whipping Cream in a glass bowl. Place it in the microwave and heat it until it is boiling. Then add the Chocolate Chips and stir them in until they are melted. Let it sit and cool completely.
7. Make the Peanut Butter Filling. In a medium-sized mixing bowl add the Butter, Peanut Butter, Vanilla, Milk, and the Powdered Sugar. Mix it until it is smooth and creamy.
8. Place the 1st layer of cake on a cake dish. Spread the Peanut Butter Layer over the top. Then place the 2nd layer of cake on top.
9. Using an electric mixer, beat the Chocolate mixture on high until it is thick and creamy. Then spread it over the entire cake.
10. Melt Peanut Butter and drizzle it over the top of the cake. Decorate it with Reese’s, or any other toppings you enjoy. You can also pipe the Chocolate Mousse to decorate the cake.
11. Serve and enjoy!
