This is a delicious cake recipe! I have not always been a fan of Red Velvet Cake, but after creating this recipe, I am a huge fan of it now! It is so moist and flavorful. It is soft and has the perfect texture and the cream cheese frosting makes it perfect! My family loves this cake! My husband wasn’t really a fan of Red Velvet Cake either, but now he loves it. This recipe will make it so you don’t need to go and look for another one, and you can ditch the boxed cake mix. I hope you enjoy it as much as we do!

Ingredients:

Red Velvet Cake

1 c. Salted Butter

1 ½ c. Sugar

½ c. Oil

3 Eggs

1 tsp. Baking Soda

½ tsp. Salt

2 Tbl. Cocoa

1 tsp. Vinegar

2 tsp. Vanilla

1 oz. Red Food Coloring

1 c. Buttermilk

2 ½ c. Cake Flour (or substitute 2 Tbl. Cornstarch into your sifted flour to make your own cake flour)

Bake at 350°F for 25-30 minutes


Cream Cheese Frosting

½ c. Salted Butter

8 oz. Cream Cheese

2 tsp. Vanilla

¼ c. Milk

4 c. Powdered Sugar

Preparation:

1. Preheat the oven to 350°F.


2. In a mixing bowl, cream the Butter and the Sugar. Add the Oil and mix well.


3. Add the Eggs and mix well.


4. Add the Baking Soda, Salt, Cocoa, Vinegar, Vanilla, Red Food Coloring, Buttermilk, and the Cake Flour. Mix well.


5. Pour into 2 greased and floured round cake pans. I also like to line my cake pans with Parchment Paper so that they come out easily. See the picture for an example.


6. Bake the cakes for 25-30 minutes, or until an inserted toothpick comes out clean. Remove from the oven.


7. Remove the cakes from the pans and place them on a cooling rack. Allow them to cool completely before frosting them.


8. Make the Cream Cheese Frosting. In a mixing bowl combine the Butter, Cream Cheese, Milk, Vanilla, and the Powdered Sugar. Mix it well until it is creamy and smooth.


9. Frost the cake.


10. Serve and enjoy!
