
I was looking for a quick and easy dinner to make for my family that used some of the ingredients I already had in my pantry. I love one pot meals because it saves on dirty dishes and time. I made this recipe and my family absolutely loved it! I don’t always come up with meals that every single person loves, but this one was a huge success! The recipe takes less than 30 minutes to make. The flavors are the perfect combination. The added cream cheese makes the rice creamy and delicious! I used some leftover chicken from a rotisserie chicken I had on hand, but you can dice and cook chicken as well. I hope you love this recipe as much as we do!
Preparation:
1. Dice and cook the Chicken Breast.
2. Add the Rice, Water, Chicken Bullion, Cumin, Chili Powder, and the Salsa. Stir it together. Then cover the pot and turn the stove on to high. Once it starts boiling, then turn the temperature down to medium-low. Cook it until the liquid is gone, then remove it from the heat.
3. Add the Black Beans and the Cream Cheese. Stir them in.
4. Top with Shredded Cheese. Put the lid on top and let it sit for 5 minutes to let the cheese melt.
5. Serve and enjoy!
