Mexican Corn and Pasta Salad
This is a delicious and simple pasta salad that my family loves! This salad is perfect for a Cinco de Mayo party, Barbeque, or a potluck. It is tasty and will be a crowd pleaser for sure. I love the flavors with the creamy lime dressing and the fresh cilantro. The Cotija Cheese is what makes this salad the best! I love anything with Cotija in it! I hope that you love this salad as much as we do!
Preparation:
1. Cook the Pasta according to package directions. Drain and cool. Then place in a large mixing bowl.
2. Chop the Green Onions, Jalapeño, and the Cilantro. Place them in with the Pasta.
3. Drain the Corn and pour it into the salad. Add the Avocado, Bacon Bites, and the Cotija Cheese. Stir together.
4. Make the dressing. In a small bowl combine the Mayonnaise, Lime Juice, Cumin, Paprika, Chili Powder, Hot Sauce, and a pinch of Salt and Pepper. Stir together and pour over the salad. Toss the salad until it is coated in the dressing.
5. Serve and enjoy!
