I love Instant Pot meals! I think getting an Instant Pot was the was one of my best cooking decisions ever! I love the versatility of it and how fast and easy it is to cook a meal for my family. I love this meal because it is so easy to make and so full of flavor! I love Sundried Tomatoes and look for excuses to add them to my meals. My family doesn’t always love them so sometime I just add it to mine. That being said, you can always omit them if you don’t care for them. This pasta is creamy with tender pieces of chicken. This is a great meal to make if you are pressed for time. I hope you love this recipe as much as we do!

Ingredients:

3 lb. Chicken

2 Tbl. Olive Oil

1 Tbl. Minced Garlic

1 lb. Farfalle Pasta

2 c. Heavy Cream

1 ½ c. Water

1 Tbl. Knorr Chicken Bullion

1 tsp. Paprika

1 tsp. Basil

1 c. Parmesan Cheese

8.5 oz. Jar Sundried Tomatoes, drained

2 c. Fresh Spinach

Cook for 6 minutes

Preparation:

1. Cut the Chicken into bite-sized pieces. Turn the Instant Pot onto Sauté mode. Add the Olive Oil when it is heated up, then add the Chicken and the Garlic. Cook the Chicken until it is mostly cooked through. Click here for the Instant Pot that I use and love.


2. Spread the Chicken evenly on the bottom of the pot. Then pour the noodles evenly out over the top of the chicken. Add the Cream, Water, Chicken Bullion, Paprika, and the Basil.


3. Place the lid on the Instant Pot and press the Pressure Cook button and cook it on High Pressure for 6 minutes. Do a quick release of pressure.


4. Stir the Pasta. Add the Spinach, Sundried Tomatoes, and the Parmesan Cheese. Place the lid back on the Instant Pot and leave it for 2-3 minutes to allow the Spinach to wilt.


5. Serve and enjoy!

Alterations
