I am such a cookie lover and these cookies are one of my favorites! I love hot chocolate so much so I wanted to create a mixture of both. Hot chocolate has to have marshmallows so I wanted to incorporate them into this cookie. I made the cookie from hot chocolate. You can use any kind of hot chocolate that you enjoy. This cookie is soft and delicious. It is topped with melted marshmallows and has chocolate ganache over the top of it. My family went wild over it and said it was one of the best cookies ever! This recipe is simple to make and doesn’t require any refrigeration. This is the perfect cookie to add to your Christmas cookie list, or to make anytime. I hope you love this recipe as much as we do!

Ingredients:

Hot Chocolate Cookies

1 c. Salted Butter

1 c. Brown Sugar

1 c. Hot Chocolate Mix

2 Eggs

2 tsp. Baking Soda

1 tsp. Salt

2 tsp. Vanilla

4 c. Flour

2 c. Mini Marshmallows

Bake at 350°F for 10 minutes


Chocolate Ganache

1 c. Heavy Whipping Cream

2 c. Semi-sweet Chocolate Chips

Preparation:

1. Preheat the oven to 350°F.


2. In a medium-sized mixing bowl cream the Butter, Brown Sugar, and the Hot Chocolate.


3. Add the Eggs and mix them in well.


4. Add the Baking Powder, Salt, and the Vanilla and mix it up.


5. Add the Flour and mix it well.


6. Grease a baking sheet and roll the dough into 1 ½ inch balls. Place them on the baking sheet. Bake them for 8 minutes. Then remove them from the oven and place 6 Mini Marshmallows on the top of each cookie. Then put them back in the oven for 2 more minutes. Remove them from the oven and let them cool on the pan for 5 minutes. Then move them to a cooling rack.


7. Make the chocolate ganache. Heat the Heavy Whipping Cream until it boils. I like to heat it in the microwave. Then add the Chocolate Chips and stir it until it is smooth and creamy. Let it cool for 30 minutes and then spoon it over the top of the cookies. You can decorate with little marshmallows to make them more festive.


8. Serve and enjoy!
