This recipe is amazing! I am a huge salad lover, and this has to be one of my top favorite salads to make. I like to make a salad for dinner for my family as often as I can to get some good veggies in my kids. They aren’t always excited, but they all love this one. The dressing is simple to make and has tons of flavor. I like to make a big salad so that I can eat it for lunch for a few days afterward. I usually serve this with some Soft French Bread because my family likes their carbs with their veggies. But it makes a nice addition to the meal. I hope you love this recipe as much as we do!

Ingredients:

Dressing/Marinade

1/3 c. Honey

5 Tbl. Dijon Mustard

1 Tbl. Vinegar

1 tsp. Minced Garlic

2 Tbl. Olive Oil

¼ tsp. Salt

4 Boneless Chicken Breasts


Salad

½ c. Bacon

2 heads Romaine Lettuce

2 c. Cherry Tomatoes

1 large Avocado

½ c. Corn

½ Red Onion

Diced Chicken

Preparation:

1. In a small bowl combine the Honey, Dijon Mustard, Vinegar, Garlic, Salt, and the Olive Oil. Mix together. Pour half of it into a Ziplock bag to marinate the Chicken, and save the rest for the dressing on the salad. Let the Chicken marinate for 1-2 hours, or overnight for more flavor.


2. Cook the Chicken on the grill, or in a pan on the stove until it is cooked through. Set aside to cool. Then dice the chicken for the salad.


3. Cook the Bacon, then let it cool and cut it into small pieces. You can also use Bacon Bites to save on time.


4. In a large salad bowl combine the Romaine Lettuce, Cherry Tomatoes, Avocado, Corn, Red Onion, Bacon, and the Chicken. Pour the remaining dressing in and toss it to coat.


5. Serve and enjoy!
