Crumbl Copycat Strawberry Cake Cookies
These cookies are absolutely delicious! When I made these cookies for the first time my family devoured them! These cookies are soft and buttery with little pieces of freeze-dried strawberries in every bite of the cookies. I add more than Crumbl does to their cookies and they have so much more flavor! It is topped with a strawberry cream cheese icing that is delicious and will make you want to lick the bowl because it is so yummy! Combine the two and you have perfection! These cookies stay soft and yummy. These are perfect for anytime. You can make them for your family, girls’ night, or for a potluck. They will be devoured quickly! I hope you enjoy this recipe as much as we do!
Ingredients:
Strawberry Cookies
1 c. Salted Butter
1 c. Sugar
¾ c. Brown Sugar
2 Eggs
1 tsp. Salt
2 tsp. Baking Powder
2 tsp. Vanilla
¾ c. Freeze-dried Strawberries
3 c. Flour
Bake at 350°F for 10-12 minutes
Strawberry Frosting
½ c. Salted Butter
1 8 oz. package Cream Cheese
1 Tbl. Strawberry Jello
¼ c. Milk
1 tsp. Vanilla
3 c. Powdered Sugar
Preparation:
1. Preheat the oven to 350°F.
2. In a medium-sized mixing bowl cream the Butter, Sugar, and the Brown Sugar.
3. Add the Eggs and mix well.
4. Add the Salt, Baking Powder, Vanilla, and the Freeze-dried Strawberries chopped into small pieces. Mix well.
5. Add the Flour and mix well.
6. Grease a large baking sheet. Roll the dough into 1 ½ inch balls of dough. Place on the cookie sheet. Flatten with the palm of your hand. Roll remaining cookies.
7. Bake at 350°F for 10-12 minutes till they are lightly golden. Let the cookies sit on the cookie sheet for 5 minutes. They will continue setting up. Then remove them to a cooling rack. Let them cool completely before icing them.
8. Make the Strawberry icing. In a medium-sized mixing bowl combine the Butter, Cream Cheese, Vanilla, Milk, Strawberry Jello powder, and the Powdered Sugar. Mix until it is smooth and creamy.
9. Frost the cookies. Then if you would like you can add white chocolate shavings to the top of the cookies for decoration.
10. Serve and enjoy!
