
This is a delicious cookie! I love anything with peaches and this cookie is no exception! It is the perfect combination of cookie, cinnamon, and peaches with a delicious frosting over the top. The cookie is a soft and moist cinnamon oatmeal cookie, topped with a delicious peach topping and cinnamon frosting on top. It has cookie crumbles over the top which makes it perfect! This cookie has to be refrigerated, but it is sure to be a huge crowd pleaser! I think this one is a little better than Crumbl’s cookie, but it is a fierce competition because their cookie was really delicious! But these cookies are a fraction of the cost and you can have the whole batch! I hope you love this recipe as much as we do!
Ingredients:
Cinnamon Oatmeal Cookies
1 c. Salted Butter
1 c. Brown Sugar
¾ c. Sugar
2 Eggs
1 tsp. Salt
2 tsp. Baking Powder
4 tsp. Cinnamon
2 tsp. Vanilla
1 c. Quick Oats
3 ½ c. Flour
Bake at 350°F for 10-12 minutes
Crumble Topping
¼ c. Salted Butter
¼ c. Brown Sugar
½ c. Flour
1 tsp. Cinnamon
Bake at 350°F for 5-7 minutes
Peach Topping
21 oz. can Peach Pie Filling
1 tsp. Cinnamon
Frosting
¼ c. Salted Butter
2 Tbl. Milk
1 tsp. Vanilla
2 c. Powdered Sugar
1 tsp. Cinnamon
Preparation:
1. Preheat the oven to 350°F.
2. In a medium-sized mixing bowl cream the Butter, Brown Sugar, and the Sugar.
3. Add the Eggs and mix well.
4. Add the Baking Powder, Salt, Cinnamon, and the Vanilla. Mix well.
5. Add the Oatmeal and the Flour. Mix well.
6. Grease a baking sheet and roll the cookie dough into 1 ½-2 inch balls of dough. Bake for 10-12 minutes. If they start to dome, then gently press it down with a spatula so that it is flat. Let them cool for 3-4 minutes on the pan, then move them to a cooling rack to finish cooling. Click here for the Extra Large baking sheets that I use and love!
7. Make the Crumbles by mixing the Butter, Brown Sugar, Flour, and Cinnamon in a small mixing bowl. Sprinkle it over a baking sheet and bake it for 7 minutes on 350°.
8. Place the Peach Pie Filling and the Cinnamon in a food processor or a blender. Blend it till it is mostly smooth. Spread the Peach mixture over the top of the cooled cookies.
9. Make the Frosting. In a medium-sized mixing bowl cream the Butter, Milk, Vanilla, Cinnamon, and the Powdered Sugar. Place the frosting in a piping bag and swirl it over the top of the peaches. Sprinkle the crumbles over the top of the icing.
10. Served and enjoy!
