I love anything with Cookie Butter in or on it. I try not to keep it in the house because I am always tempted to eat it! These cookies have Cookie Butter on top as well as stuffed in the middle. They are HEAVENLY! The Cookie Butter in the middle is soft and melty and perfect. These cookies are not difficult to make but will wow everyone that tries them. The key is making sure that your cookie butter is partially frozen and then it is simple to work with it. These cookies are better than Crumbl’s. They are soft and moist and perfect in every way. I hope that you enjoy them as much as we do!

Ingredients:

1 c. Salted Butter

1 c. Brown Sugar

¾ c. Sugar

2 Eggs

2 tsp. Baking Powder

1 tsp. Salt

2 tsp. Vanilla

3 ½ c. Flour

1 container Cookie Butter

Bake at 350°F for 12-14 minutes

Drizzle the top with Cookie Butter

Preparation:

1. PIace a jar of Cookie Butter in the Freezer. You will want it partially frozen so that it is easier to work with. Let it freeze for at least 30 minutes.


2. Preheat the oven to 350°F.


3. In a medium-sized mixing bowl cream the Butter, Brown Sugar, and the Sugar.


4. Add the Eggs and mix them well.


5. Add the Baking Powder, Salt, and the Vanilla and mix well.


6. Add the Flour and mix well.


7. Grease a baking sheet. Then form a ball of cookie dough that is about 1 1/2 -2 inches across. Press your fingers in the middle to make a bowl shape. (See the picture for an example). Then spoon about a Tablespoon of Cookie Butter and make a ball out of it. Place it in the middle of the cookie dough and work the dough around the cookie butter so that it covers it completely. Place it on the cookie sheet. 


8. Bake the cookies for 12-16 minutes. If you make smaller cookies, the baking time will be less. Let the cookies cool on the pan for about 5 minutes, then move them to a cooling rack.


9. Drizzle Cookie Butter over the top of the cookies with a piping bag. You can warm it in the microwave to make it easier to drizzle.


10. Serve and enjoy!
