This is a recipe that has been passed down from my grandma. I remember her making it for me when I was a kid. This is also a favorite of my family. It is so quick and easy and makes a warm and flavorful soup for a cold day. I love to serve this with Quesadillas, Grilled Cheese Sandwiches, Fresh Bread with butter, or Fry Bread. It is one of my go-to meals when I don’t have a lot of time or energy and the kids are always happy.

Ingredients:

1 can Tomato Juice

1 Can Evaporated Milk

2 tsp. Baking Soda

3/4 tsp. Garlic Salt

1 Tbl. Chives

4 Tbl. Cornstarch

5 Tbl. Cold Water

Preparation:

1. In a large pot, heat 1 can of Tomato Juice. I put the stove on high and keep my eye on it.


2. In a separate saucepan, heat 1 can of Evaporated Milk. I just put the heat on medium and heat it at the same time I am heating my Tomato Juice.


3. When the Tomato Juice begins to boil, add the Baking Soda and stir it in completely. I usually take it off the heat so that it doesn’t end up boiling over. When you add the Baking Soda, it bubbles like crazy.


4. When the bubbling Tomato Juice calms down, then stir in the warmed-up milk. The milk doesn’t need to boil, it just needs to be warm. You could also warm the milk in the microwave.


5. Add the Garlic Salt and the Chives.


6. In a separate bowl, combine the Cornstarch and the water and stir it until it is smooth.


7. Put the Tomato Soup back on the stove on medium heat and stir in the cornstarch mixture. This will make your soup thicken a little so it has a little texture.


8. Serve and enjoy!
