I love Lemon Bars! I have always loved them. I love anything with lemon in it so these are a favorite! I have tried many different versions of this recipe to find the one that I felt was perfect. I like a thicker shortbread crust, but many people enjoy a thin crust. I love shortbread so I wanted a thicker crust with a thick amount of lemon. That, to me, is the perfect lemon bar. This recipe has a thick shortbread crust and a thick, smooth lemon topping. This recipe is simple to make and is so delicious! I hope you love them as much as we do!

Ingredients:

Crust

1 c. Salted Butter, melted

½ c. Sugar

½ tsp. Salt

2 tsp. Vanilla

2 ¼ c. Flour

Bake at 350° for 20 minutes


Lemon Filling

2 c. Sugar

1 c. Lemon Juice

7 Eggs

½ c. Flour

Bake at 350°F for 25-30 minutes

Dust with Powdered Sugar

Preparation:

1. Preheat the oven to 350°F.


2. In a mixing bowl combine the Melted Butter, Sugar, Salt, Vanilla, and the Flour. Mix it up well.


3. Press the crust into a greased 9x13 glass baking dish. Bake for 20 minutes, or until the crust is lightly browned.


4. While the crust is baking, in a medium-sized mixing bowl combine the Sugar, Eggs, Lemon Juice, and the Flour. Mix it well.


5. When the crust is done baking pour the lemon mixture over the top of the crust.


6. Bake for 25-30 minutes, or until the center is set and doesn’t jiggle.


7. Remove from the oven and cool completely. Dust the top with Powdered Sugar.


8. Serve and enjoy!
