This is a delicious and simple side dish with 3 different kinds of cheese. Everyone likes mac and cheese! When I grew up I ate it as a main dish, but never even thought of eating as a side dish, particularly with Thanksgiving, Christmas, or Easter. When I moved to the south, I learned that it is a necessity! I have had so many different mac and cheese recipes since I moved here, and there are good things about all of them. Everyone likes it a little different. This recipe is what I like best. I like to add Smoked Gouda cheese to mine to add more flavor to it as well as garlic salt. This recipe is both creamy and flavorful. It can be served with barbeque, or as your side for holidays. It is bound to get eaten by kids and adults alike. I hope you like my version!

Ingredients:

16 oz. Macaroni Noodles

½ c. Salted Butter

½ c. Flour

4 c. Milk

8 oz. Cream Cheese

2 tsp. Garlic Salt

4 c. Sharp Cheddar Cheese

4 c. Smoked Gouda Cheese

Bake at 350°F for 25 minutes

Preparation:

1. Cook the Macaroni Noodles according to package directions. Drain.


2. While the pasta is cooking, in a saucepan melt the Butter on a medium heat. Let it cook until it starts to brown a little. Then add the Flour and stir it until it is thick and smooth. Cook it for about 2 minutes.


3. Stir in the Milk and the Cream Cheese. Continue to cook it until the cream cheese is melted and mixed in and the sauce begins to thicken. Cook it to your desired thickness…I usually only cook it until it starts thickening because I don’t like it too thick.


4.  Stir in the Garlic Salt, 2 cups of Shredded Cheddar Cheese, and 2 cups Shredded Gouda Cheese. Stir them in until it is creamy and smooth. Stir the sauce into the cooked Macaroni.


5. Spread half the Macaroni and Cheese into the bottom of a 9x13 glass baking dish. Then sprinkle 1 c. Cheddar Cheese and 1 c. Smoked Gouda Cheese on top. Spread the remaining Mac and Cheese over that and top it with 1 c. Cheddar Cheese and 1 c. Smoked Gouda Cheese. Click here for the 9x13 glass baking dish that I use and love!


6. Bake at 350°F for 25 minutes.


7. Serve and enjoy!
