Oh, my goodness, if you are looking for a delicious pork recipe, then this is it! I made this for a work party for my husband and it was a huge hit! I wanted something simple that everyone would love. Pork is an easy win for most everyone and this recipe is tender and juicy, as well as very easy. The cranberry glaze is delicious and adds a unique and delicious flavor. It is not really sweet like you might expect, but very flavorful. I like to add a little sauce to my plate so that I can dip every bite in it. The kids all loved it and like it enough that we may eat this for Christmas Dinner! I hope you love this recipe as much as we do!

Ingredients:

5 lb. Pork Loin Roast

2 Tbl. Olive Oil

Salt and Pepper

1 can Jellied Cranberry Sauce

½ c. Brown Sugar

½ c. Honey

1 c. Orange Juice

2 Tbl. Cornstarch

2 Tbl. Cold Water

Preparation:

1. Preheat the oven to 325°F.


2. Dry your Pork Loin with a paper towel. Heat a frying pan on the stove. Add the Olive Oil and let it heat up. Then Salt and Pepper the roast and let it cook for about 3-4 minutes on each side to brown it.


3. Remove the roast from the pan and place it in a 9x13 glass baking dish. Bake it in the oven uncovered for 1 hour. While it is baking make the cranberry glaze. Click here for the Baking Dish that I use and love!


4. In a medium-sized saucepan combine the Cranberry Sauce, Brown Sugar, Honey, and the Orange Juice. Turn the heat on medium and stir with a whisk to combine. Cook until it boils and it is smooth. Mix the Corn Starch with the Cold Water. Stir the mixture into the Cranberry mixture until it thickens and is smooth.


5. Spread the glaze over the roast after it has baked for an hour. Place it back in the oven for 20 minutes. Then spread the glaze over it 1 more time and let it bake for an additional 15-20 minutes. The pork temperature should be 145° when it is done cooking.


6. Remove the roast from the oven and let it rest for 10-15 minutes. You can cover it with aluminum foil so that it doesn’t get cold.


7. Serve and enjoy!

Alterations

  • You could cook the roast on a lower temperature for longer if you want it to be more tender.
