This is an absolutely delicious dessert! I love anything with mint and chocolate and this recipe is perfection! It is a simple recipe that anyone can make and will be a huge crowd favorite. The crust is made with crushed Oreos and topped with Mint Ice Cream. The topping is a thick and creamy fudge layer that goes perfectly with the mint ice cream. It has crushed Oreos on the top for a thick and delicious dessert. You could substitute any flavor of ice cream in this recipe that you like. It will all taste yummy!

Ingredients:

Crust

30 Oreos

¼ c. Melted Butter


Ice Cream

2-48 oz. containers Mint Ice Cream


Topping

½ c. Salted Butter

2 c. Semi-sweet Chocolate Chips

1 can Evaporated Milk

2 c. Powdered Sugar

1 tsp. Vanilla

10 Oreos for the top

Preparation:

1. Make the Fudge topping. In a saucepan melt the Butter. Add the Evaporated Milk, Chocolate Chips, and the Powdered Sugar. Stir it together and cook it over a medium heat. Cook it until it reaches a boil and then boil it for 1 minute while stirring constantly. Stir in the Vanilla. Set it aside to cool. Let it cool for at least 1 hour.


2. Crush the Oreos in a Food Processor or in a Ziplock Bag. They do not need to be finely crushed…it is ok if there are some chunks. Add the Melted Butter and stir it until it is mixed together well. Press the Oreos into the bottom of a 9x13 glass baking dish.


3. Spoon the Ice Cream over the top of the Oreo crust. Spread it out evenly. Put it in the freezer while you wait for the fudge to cool.


4. Pour the cooled Fudge topping over the top of the Ice Cream and spread it out evenly.


5. Chop 10 Oreos into small bite-sized pieces and sprinkle them over the top of the fudge.


6. Place in the freezer for 2 hours.


7. Serve and enjoy!
