
This is a quick and easy meal. It really doesn’t get much simpler than this. I love to make these on a busy night, or on the weekend. These make a quick an easy lunch or dinner. When I buy chicken, I usually cook some ahead of time, cut it up, and freeze it so that I can quickly thaw it and use it. It just makes everything quicker and easier. I like to use it for these quesadillas. It makes them yummier as well as more filling because of the added protein. The kids always devour these whenever I make them. They are also very cheap. You can serve these with Salsa and a side salad or fresh fruit. I hope you love these as much as we do!
Preparation:
1. Cook the Chicken. You can cook it in an Air Fryer, or cook it in a frying pan with a little Olive Oil. Sprinkle some salt on the Chicken and cook it until the internal temperature is 165°F. Dice into small pieces.
2. Heat up an electric skillet or a frying pan. Melt 1 Tbl. Butter. Place a tortilla on the pan. Sprinkle 2/3 c. Shredded Cheese, ½ c. Chicken, and sprinkle the Fajita Seasoning on Top. Place another Tortilla on top.
3. Cook until lightly golden brown and crispy on each side. Remove from the heat. Cut into wedges. Repeat with the remaining tortillas.
4. Serve and enjoy!
