Chicken Fajitas
Fajitas are one of my favorite meals! They are healthy and simple and so delicious! I make them pretty often during the summer time because I like to cook them on the grill. They have lean protein and so many yummy vegetables to go with them. My kids always eat them quickly.
Preparation:
1. Slice 2-3 lbs. of Boneless, Skinless Chicken Breast in long strips. Put them in a bowl or a Ziplok bag with ¼ c. Fajita Seasoning and mix the chicken with the seasoning. If you have time, let this sit for 30 minutes to let the chicken marinate in the seasoning.
2. While the chicken is marinating, slice your Peppers and Onions and get them ready to sauté. I like to slice my onions under the microwave fan so that my eyes don’t bother me.
3. You can cook the veggies in a pan on the grill or on the stove. I usually just cook them on the stove. In a frying pan, heat and pour in 1 Tbl. Olive oil. Put all the peppers and onions in the pan and sauté them until they are cooked through. I sprinkle salt on them and set them aside.
4. Heat the grill. I cook the Chicken slowly on low. Spread the chicken over the grill and sprinkle a little more fajita seasoning on it if you desire. Turn the chicken pieces every few minutes until they are cooked through.
5. Put your chicken in a dish to keep it warm.
6. On a warm tortilla, put your Chicken, Peppers and Onions, Salsa, Tomatoes, Sour Cream, Lettuce, Avocado, Lime, and any other topping that you love and enjoy!
