Chicken Cordon Bleu Casserole
This is a delicious dinner that is fast and easy for a busy weeknight dinner. My kids love this meal and always eat it quickly and ask for more. It has a delicious sauce that gives it tons of flavor. You can also make this into a freezer meal to bake another time for when you need a quick and easy meal. It tastes like Chicken Cordon Bleu without all the work. Your family will love this recipe!
Ingredients:
Meat Layer
5-6 c. Shredded Chicken ( I like to use a Costco Rotisserie Chicken)
1 lb. Chopped Ham
½ lb. Sliced Swiss Cheese
Sauce
4 Tbl. Salted Butter
4 Tbl. Flour
3 c. Milk
1 Tbl. Dijon Mustard
½ tsp. Paprika
2 Tbl. Lemon Juice
1 ½ tsp. Salt
½ tsp. Pepper
Topping
1 ¼ c. Seasoned Bread Crumbs
¼ c. Parmesan Cheese
4 Tbl. Melted Butter
Preparation:
1. Preheat the oven to 350°F.
2. Shred a Rotisserie Chicken, or you can used canned chicken. Place the chicken in the bottom of a 9x13 glass baking dish.
3. Chop the Ham into small bite-sized pieces and spread it over the chicken.
4. Spread the slices of Swiss Cheese over the top of the meat.
5. In a medium saucepan melt the Butter over a medium heat. Whisk in the Flour and let it cook for 1-2 minutes while stirring it constantly.
6. Add the Milk slowly while stirring continuously. Continue to cook it until the sauce thickens and starts to boil. Remove it from the stove and add the Dijon Mustard, Paprika, Lemon Juice, Salt, and the Pepper. Stir it until it is mixed well and pour the sauce over the top of the cheese.
7. In a small mixing bowl make the topping by combining the Seasoned Bread Crumbs, Parmesan Cheese, and the Melted Butter. Stir it together until it is mixed. Pour the bread crumbs evenly over the top of the sauce.
8. Bake the casserole for 30-40 minutes, or until it is hot and bubbly.
9. Serve and enjoy!
