
This recipe is a big favorite with my kids. There is always lots of skepticism whenever I try a new recipe, and this was no exception. When they tried a bite, they all devoured it and asked for more. I love it when I get that response from them! I love this recipe because it is quick and easy to make and it makes a lot so I know I will have some good leftovers for another meal. I don’t love to cook every day, and it is a lot cheaper not to. This casserole is creamy and very filling and has a great flavor. I like to pair this with some fruit or a lettuce salad. I hope you love this recipe as much as we do!
Preparation:
1. Cook 2 c. dry Rice. While the rice is cooking, steam the broccoli and set aside.
2. You can cook the Chicken Breast in an air fryer, or you can cook it in a frying pan with a little Olive Oil until it is cooked all the way through. Dice the Chicken when it is finished cooking.
3. Make the Sauce. In a saucepan, melt the Butter on a medium heat. When the butter is melted, stir in the Flour with a whisk until it is smooth. Cook it for 2 minutes, then add the Milk while stirring continuously.
4. Cook it on a medium heat until it thickens. Then stir in the Chicken Bullion and the Shredded Cheese until it is smooth and the Cheese is melted.
5. Preheat the oven to 350°F.
6. Stir the Rice, Broccoli, Chicken, and the Sauce together and put it in a 9x13 glass baking dish.
7. Crush the Crackers and mix them with the Butter. Put the Cracker Crumbs on top of the casserole and bake for 30-35 minutes.
8. Serve and enjoy!
