This is a dessert that we found in every bakery we went to in Australia. It immediately became a huge favorite of ours! We may have eaten a few too many! These are absolutely delicious. There is a shortbread crust on the bottom with the perfect caramel on top. It isn’t runny, but keeps its shape without being chewy and hard. It is topped with Chocolate that cuts smoothly without chipping and breaking. These really are simple to make! They look like they would take a lot of time, but they are fast and easy. I knew after we visited Australia that we needed to bring these home with us to enjoy for the rest of our lives. Now anyone can benefit from this recipe. I hope that you enjoy this recipe as much as we do!

Ingredients:

Crust

¾ c. Shredded Coconut

1 c. Flour

½ c. Brown Sugar

½ c. Melted Butter

Bake at 350°F for 15 minutes


Caramel

14 oz. can Sweetened Condensed Milk

2 Tbl. Salted Butter

2 Tbl. Light Corn Syrup

1/3 c. Brown Sugar

1 ½ tsp. Vanilla

Bake at 350°F for 10 minutes


Chocolate

2 c. Chocolate Chips

2 Tbl. Oil

Preparation:

1. Preheat the oven to 350°F.


2. In a small mixing bowl combine the Brown Sugar, Flour, Coconut, and the Butter. Stir to combine.


3. Line a square 9x9 glass baking dish with parchment paper. Then spray the parchment paper with cooking spray. Press the mixture into the bottom of the baking dish. Bake for 15 minutes. Remove from the oven.


4. In a saucepan combine the Sweetened Condensed Milk, Butter Corn Syrup, Brown Sugar, and the Vanilla. Turn it onto a medium heat. When it starts to boil, turn the heat down to medium-low heat. Let it boil for 5 minutes while stirring constantly. Remove from the heat and pour the caramel over the top of the crust.


5. Bake the caramel for 10 minutes. Remove from the oven and cool.


6. Melt the Chocolate Chips. Add the Oil and mix it in well.


7. Pour the chocolate over the top of the caramel layer. Place it in the refrigerator to cool completely.


8. Slice it into squares. Serve and enjoy!

Alterations

  • You can omit the Coconut from the crust and just add 1/2 c. more flour.
