
This pie recipe is absolutely divine! My kids love any recipe that has Biscoff Cookie Butter in it. I have made several recipes with it and they are always a huge hit. I wanted to try a new pie recipe for Thanksgiving, so I decided to use a peanut butter pie recipe that I had and turn it into a cookie butter pie instead. My family went wild over it! The nice thing about this pie is that it is quick and easy to make, but will be a huge success! You can make this pie the day you need it, or you can make it in advance and freeze it. Just make sure you thaw it completely before serving it. Whether you use this recipe for Thanksgiving, or another holiday, or just because, I hope you love it as much as we do!
Preparation:
1. Preheat the oven to 375°F.
2. Crush one package of Biscoff Cookies. You can do it in a food processor or in a gallon Ziplock bag with a rolling pin. Place them in a mixing bowl. Add the Melted Butter and stir together to combine. Then press the cookie crumbs into a 9-inch pie dish.
3. Bake at 375°F for 7 minutes. Remove from the oven and let it cool completely.
4. In a medium-sized mixing bowl add the Heavy Whipping Cream. Mix until it thickens.
5. Add the Cream Cheese and mix it until it is smooth and creamy.
6. Add the Powdered Sugar and the Cookie Butter and mix it until it is smooth and creamy. Pour it into the cooled pie dish. Refrigerate for 1 hour.
7. Place ½ c. Cookie Butter in a microwave safe bowl and microwave it for about 20-30 seconds, or until it is pourable. Pour the Cookie Butter on top of the pie and spread it until the whole pie is covered. Refrigerate 3-4 hours.
8. Serve and enjoy!
