This is one of my favorite soup recipes! I love how simple this soup is to make on a busy night. It is tasty and so full of flavor. I actually think this is a little better than Olive Garden’s soup. It has chunks of bacon and sausage with plenty of garlic flavor. The potatoes are soft and tender with soft kale to add color and flavor. Add a little red pepper flakes to give it a little kick and it is the perfect soup! My family devours this soup every time I make it and ask for more. I don’t even have trouble getting them to eat the kale. This is a perfect recipe for a busy, cold night. It is comfort food at it’s finest! I hope you enjoy this recipe as much as we do!

Ingredients:

1 lb. Italian Sausage

4 slices Bacon

1 large Onion

3-4 large Russet Potatoes

2 c. Water

4 Tbl. Knorr Chicken Bullion

3 cloves Garlic, minced

2 c. Packed Kale, chopped

2 c. Half and Half Cream

¼- ½ tsp. Crushed Red Pepper Flakes

Parmesan Cheese for Garnish

Preparation:

1. In a heavy-bottom soup pot brown the Sausage. Drain the grease and set aside.


2. Dice the Onion. Then cut the Bacon into small strips. Cook the Bacon and the Onion together until the Bacon is cooked and the Onion is translucent.


3. Peel and slice the potatoes into thin strips. I like to cut the potato into halves, then cut the half again to cut the thin pieces. See the picture for an example.


4. Add the Water, Garlic, Potatoes, and the Chicken Bullion to the Bacon and Onions. Bring it to a boil. Add the Sausage and cook it on a medium heat until the potatoes are mostly tender, but not quite done.


5. Add the Kale and simmer for 5-10 more minutes.


6. Add the Half and Half Cream and the Crushed Red Pepper Flakes. Heat through.


7. Serve and enjoy!
