Sweet Potato Casserole
I have never, ever been a sweet potato fan. I have tried them in many different ways and I never like them. I can tolerate sweet potato fries if they have an amazing dipping sauce, but that is about it. Everyone tells me their health benefits, which are many, but I still haven’t been able to bring myself to eat them. My sister made a sweet potato casserole for Thanksgiving and I tried it. It was the best version of sweet potatoes I had had up until that point, but it still wasn’t something I would eat again…just me. I’m sure it was a great recipe! I had someone ask why there was no sweet potatoes on my website, and I realized that tons of other people like them, so I had better remedy that problem. I found my grandma’s recipe and looked through it. I decided to try it and made a few small changes to it. When I tried it, I actually liked it! I ate a whole helping and thought it was delicious! I finally found a way to cook sweet potatoes in a delicious way! Now these aren’t healthy at all, but this recipe is perfect for a holiday side dish. They are perfectly sweetened and nice and fluffy. The crust is crisp and has the perfect flavor to go with the sweet potatoes. If you love or hate sweet potatoes, you are bound to love this recipe! I hope enjoy it as much as we do!
Preparation:
1. Cook the Sweet Potatoes. I baked mine for 1 hour on 350°. Remove them from the oven and let them cool. Remove the skins.
2. Place the Sweet Potatoes in a food processor and blend them until they are smooth and creamy. If you don’t have a food processor you can click this link, or you can mix them with hand mixers until they are creamy and smooth.
3. Add the Sugar, Salt, Vanilla, Eggs, and the Butter. Mix it up well. Pour into a 9x13 glass baking dish.
4. Make the topping. In a medium-sized mixing bowl combine the Flour, Brown Sugar, Pecans, Cinnamon, and the Melted Butter. Mix it up well.
5. Pour the topping over the top of the sweet potatoes and spread it out evenly.
6. Bake at 350°F for 50-60 minutes uncovered.
7. Remove from the oven. Serve and enjoy!
