Moist Banana Cake
This is the most delicious cake! It is incredibly moist, soft, and fluffy. The Cream Cheese frosting on top makes it perfect! It is sweet, but it isn’t overpowering like some cakes. You can enjoy a piece without it being over the top. I promise, after you try this cake, you won’t need to look for another recipe. It is perfection!
Ingredients:
Cake
1 ½ c. Bananas, mashed
2 tsp. Lemon Juice
¾ c. Salted Butter
2 1/8 c. Sugar
3 Eggs
1 ½ c. Buttermilk
3 c. Flour
¼ tsp. Salt
1 ½ tsp. Baking Soda
2 tsp. Vanilla
Bake at 275°F for 45-55 minutes
Frosting
½ c. Salted Butter
8 oz. Cream Cheese
2 tsp. Vanilla
¼ c. Half and half Cream, or milk
4 c. Powdered Sugar
Preparation:
1. Preheat oven to 275°F.
2. Grease and flour a 9x13 glass baking dish.
3. In a small bowl, mash the Banana till it is smooth and creamy. Add the Lemon Juice and stir it in well. This will prevent the bananas from going brown.
4. In a large mixing bowl cream the Butter and the Sugar.
5. Add the Eggs and mix well.
6. Add the Buttermilk, Flour, Salt, Baking Soda, and the Vanilla. Mix it well.
7. Add the Mashed Bananas and mix it well.
8. Pour the batter into the greased glass baking dish.
9. Bake for 45-55 minutes, or until an inserted toothpick comes out clean. Cool completely.
10. Make your frosting. In a mixing bowl, combine the Butter, softened Cream Cheese, Milk or Half and Half, Vanilla, and the Powdered Sugar. Mix until it is smooth and creamy.
11. Frost the cake.
12. Serve and enjoy!
