Green Salad with Cottage Cheese

This is an absolutely delicious salad that is healthy and fresh. It is crisp and light. Every time I make this salad I get so many comments. You will love this salad that is unlike any salad you have eaten.

Ingredients:

Salad

10 c. Spring Mix salad

½ Purple Onion, chopped

10 slices Bacon, cooked and crumbled (or ½ c. Bacon Bites)

1 c. Cottage Cheese

½ lb. Swiss Cheese, chopped or shredded


Dressing

2 Green Onions, chopped

¾ c. Olive Oil

6 Tbl. Vinegar

¼ c. Sugar

½ tsp. Salt

¾ tsp. Poppy Seeds

Preparation:

1. Cut your bacon into ¼ inch strips and cook it until it is crispy. Drain and set aside. If you want to skip this step and make it faster, you can use bacon bites instead.


2. In a large bowl, place the Spring Mix lettuces in it. Tear up any pieces that are large into bite-sized pieces.


3. Chop the Onion and add it to the salad.


4. Cut into small pieces or shred the Swiss Cheese. Add it to the salad.


5. Add the Bacon and the Cottage Cheese.


6. Make the dressing by chopping the Green Onions and placing them in a blender or a food processor. Add the Oil, Vinegar, Sugar, Salt, and the Poppyseeds. Blend it well till the green onions are tiny and the salad dressing is mixed well.


7. Pour the salad dressing over the salad and toss it to mix it. You may not want all the dressing. Use as much as you like.


8. Serve and enjoy!

Alterations

  •  You can use as much of the salad dressing as you like. You can omit the onions if you don’t like onions. You could also add cherry tomatoes for some extra color and flavor.
