Creamy Lemon Lite Dessert
This dessert is a must-have during the spring or summer! It completely lives up to its name. I received this recipe from my adopted grandma. It was already delicious, but I made a few changes to make it even better! You won’t regret making this, and will be popular wherever you take this dessert. It is sure to be a crowd pleaser. Not to mention, it is quick and easy to make. You could also freeze this and serve it frozen.
Ingredients:
Crust
1 ¼ c. Flour
¼ c. Brown Sugar
½ c. Salted Butter
½ c. Chopped Pecans
Bake at 350°F for 15-20 minutes
Filling
1 envelope Unflavored Gelatin
1/3 c. Cold Water
2-8 oz. Packages Cream Cheese
14 oz. can Sweetened Condensed Milk
3 Tbl. Lemon Juice
3 tsp. Grated Lemon Rind
1 tsp. Vanilla
1 c. Heavy Whipping Cream
Preparation:
1. Heat oven to 350°F.
2. In a mixing bowl, combine the Flour, Brown Sugar, Butter, and Pecans.
3. Grease a 9x13 glass baking dish. Spread the crust out on the bottom of the pan and bake it for 15-20 minutes. Let it cool completely.
4. In a saucepan, combine the Unflavored Gelatin and the Cold Water. Let stand for 1 minute.
5. On a low heat, cook the Gelatin until it is dissolved and set aside.
6. In a large bowl, beat the cream cheese until it is fluffy. Gradually beat in the Sweetened Condensed Milk until smooth. Add the Lemon Juice, Lemon Peel, Vanilla, and the Gelatin Mixture.
7. In a separate bowl, mix the Heavy Whipping Cream until it is thickened into Whipped Cream.
8. Fold the Whipped Cream into the Lemon Mixture. Spread the mixture onto the cooled crust. Top with crushed Graham Crackers.
9. Refrigerate at least 2 hours before serving.
10. Serve and Enjoy!
