Peanut Butter Ganache Cookies
These peanut butter cookies are to die for! Ganache is one of my favorite things to put on cakes, cheesecakes, and now cookies. My kids tease me about how much I use it, but it makes things so delicious! These cookies are simple to make. You can make them as peanut butter cookies by themselves, or you can add the ganache and take them to the next level. Chocolate and peanut butter are meant to go together. These store well for up to a week, and they will also freeze well.
Ingredients:
Peanut Butter Cookies
½ c. Salted Butter
½ c. Sugar
½ c. Brown Sugar
¾ c. Creamy Peanut Butter
1 Egg
1 tsp. Vanilla
½ tsp. Baking Soda
½ tsp. Salt
1 tsp. Cinnamon
½ c. Quick Oats
1 ¼ c. Flour
1/3 c. Sugar to roll the cookies in
Bake at 375°F for 7-8 minutes
Chocolate Ganache
1 c. Heavy Whipping Cream
1 c. Semi-sweet Chocolate Chips
Preparation:
1. In a large mixing bowl, cream the Butter, Sugar, Brown Sugar, and the Peanut Butter till it is smooth and creamy.
2. Add the Egg and Vanilla and mix it well.
3. Add the Baking Soda, Salt, Cinnamon, Oats, and Flour. Mix it until it is well mixed.
4. Place the dough in the refrigerator and chill the dough for 3-4 hours.
5. Make the Ganache ahead of time so that it is thickened by the time your cookies are done baking. Make the Ganache by heating the cream until it is boiling. You can do it in the microwave or on the stove. Add the Chocolate and stir it until the chocolate is melted and it is creamy. Let it cool to thicken.
6. Preheat the oven to 375°F.
7. Grease your baking sheet. Roll the cookies into balls. Roll the balls of dough in sugar and place them on your baking sheet.
8. Bake the cookies for 7-8 minutes, or until they are lightly golden brown. Let them cool for a few minutes on the pan before moving them.
9. Let the cookies cool on a cooling rack until they are completely cooled. Spread the Ganache on the bottom side of half the cookies. Then place the other half of the cookies on top of the ganache to make a sandwich.
10. Serve and enjoy!

Alterations
You can omit the Ganache and make them as just peanut butter cookies. You could also just spread the Ganache on top of the cookie and not make it a cookie sandwich.
