This is a creamy and delicious cheesecake! If you are new to making cheesecakes, then this is an easy way to make it without having to bake it and worry if it is going to turn out ok. The flavor is delicious and this dessert takes about 15-20 minutes to make; verses the 5 hours it takes to make a baked cheesecake. The texture is a little different, but it is creamy and smooth. It holds its shape well and has the refreshing citrus flavor. My family loved this cheesecake. It will last for several days in the refrigerator, so you can make it ahead of time for an event. I love key lime desserts, so this one was a big winner! I hope you love this recipe as much as we do!
Preparation:
1. In a small mixing bowl, combine the Graham Cracker Crumbs, Sugar, and the Melted Butter. Stir them till they are mixed well. Then press it into the bottom of a cheesecake pan, with the sides being higher than the middle. Set aside while you mix the cheesecake.
2. In a large mixing bowl, mix the Cream Cheese until it is very smooth and creamy. Then Mix in the Powdered Sugar and the Lime Juice.
3. In a separate bowl, mix the Heavy Whipping Cream until it is thick.
4. Add the Whipped Cream to the Cream Cheese mixture and stir it in. Then add the Green Food Coloring and stir it in well.
5. Pour the cheesecake filling into the cheesecake pan and smooth it off. Refrigerate for 5-6 hours.
6. Top with whipped cream and garnish with limes. Serve and enjoy!
