This is a simple fruit “salad” that my grandma used to make. It is not the healthiest salad around, but having grown up in Utah, this was considered a must have at any family gathering. I always looked forward to having this salad when my grandma was asked to bring a salad. I think this one must have been her favorite because she made it so many times. I asked her for the recipe before she passed away, and I make it once in a while. This is a simple recipe to put together. It takes only a few minutes.

Ingredients:

2 15 oz. cans Fruit Cocktail with Juice

1 15 oz. can Mandarin Oranges, drained

3 Bananas, Sliced

2 c. Red Grapes

2 pkg. (3oz) Instant Lemon Pudding

2 c. Mini Marshmallows

16 oz. Cool Whip

Preparation:

1. Thaw a 16 oz. tub of Cool Whip.

2. Drain a 15 oz. can of Mandarin Oranges.

3. In a large mixing bowl combine the 2 cans of Fruit Cocktail with the juice, the Mandarin Oranges, and the Lemon Instant Pudding. Stir until the pudding is completely mixed in with the fruit.

4. Add the Red Grapes, sliced Bananas, Marshmallows, and the Cool Whip. Stir everything together until it is mixed well.

5. Serve and Enjoy!

Alterations

  • You can omit the bananas. If you don't eat it right away they will go brown. But it is really good with them, so if you think it will be eaten quickly, then add them to the recipe.
